FRIDAY'S RECIPES: SUNDAY DINNER

This is a hearty but easy dinner to serve for family or company on Sunday. Add salad and rolls!

Italian Style Meatloaf

Ingredients:
1 pound ground round or lean ground chuck
1 pound spicy Italian sausage (not the links)
Two 7 ounce cans mushroom pieces, drained
2 eggs
1 cup plain bread crumbs-premade or process in blender
1/4 cup diced green pepper
2/3 cup tomato paste
1/4 cup fresh minced parsley
1/4 cup green onions, sliced (remove top and bottom)
2 garlic cloves, minced
ground black pepper and salt to season
1 tsp. dried thyme, or tbsp. fresh minced thyme

Preheat oven to 375 degrees. In a large bowl add all ingredients together and mix well with a large wooden spoon or your hands. Place mixture into a large loaf pan. Bake for 30 minutes or until it tests done-no longer pink. Cool 10-15 minutes and slice. You can serve with tomato sauce and Parmesan Cheese if you wish. Serves 8.

Herb and Tomato Green Beans

Ingredients:
1 pound fresh green beans
3 tbsp. olive oil
2 tbsp. minced onion
1 clove garlic, minced
2 tbsp. sun dried tomatoes
1 tablespoon fresh basil, or 1 tsp. dried, crushed
1/2 cup black olives, sliced

Sort and clean the green beans, leaving them whole. Add to boiling, salted water and cook for about 8 minutes. Drain well and set aside. Heat the olive oil in a large skillet. Add the onions and the garlic on LOW heat, so as not to scorch the garlic. Cook 2 minutes. Add the tomatoes and basil. Cook for 3 more minutes. Add the drained beans and cook for 4 more minutes. Stir in the olives and serve.

Coconut and Macaroon Cake

Ingredients:
2 1/4 cups all-purpose flour
1/2 tsp. salt
1 cup butter, room temperature
2 cups sugar
5 eggs
1 tablespoon almond extract
1 cup coconut

Sift dry ingredients twice into a bowl. In another bowl beat the butter until creamy. Gradually add sugar, beating until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add almond extract. Add the dry ingredients a little at a time and fold in the coconut last. Turn into greased 10" tube pan or bundt pan. Bake 1 hour at 325. Cool for 30 minutes before removing from pan.

Top with the glaze below.

Cream Cheese Glaze

Ingredients:
1/4 cup Cream cheese, softened
2 tablespoons Confectioners' sugar
1 tablespoon water

On high speed, beat cream cheese and sugar until smooth. Add water and continue beating until combined. Drizzle over cake.
