FRIDAY'S RECIPES: A WEEKEND BRUNCH

This is a lovely brunch for any Sunday or a special day such as Mother's Day or Father's Day!

Savory Breakfast Tortillas

Ingredients:
2 to 3 tablespoons oil
1/2 cup minced onion
1 cup chopped mushrooms
1 1/2 cups diced cooked ham
6 eggs, beaten
1 cup shredded Jarlsberg cheese or Swiss cheese
Four 10-inch flour tortillas

Chopped green onion, scallions or chives to garnish In a large skillet over medium-high heat, sauté onion and mushrooms in oil, until lightly browned. Add the ham and stir-fry another minute. Add eggs and stir-fry 1 minute more. Remove from heat and toss egg mixture with cheese. Divide evenly among the tortillas; roll up and wrap individually in aluminum foil. Refrigerate overnight or until breakfast. Heat oven to 350 degrees. Place wrapped tortillas in the oven for 8 to 10 minutes, until heated through. For your buffet, cut in half and place on a platter. The recipe easily doubles or even triples.

Spicy Breakfast Quiche

Ingredients:
1 24-ounce package frozen shredded hash browns
1/3 cup melted butter
1 cup shredded hot pepper cheese
1 cup shredded Swiss cheese
1 cup diced cooked ham or crumbled bacon
1/2 cup half and half
2 eggs
1/4 teaspoon salt

Press thawed hash browns between paper towels to remove moisture. Pat hash browns into greased 10-inch pie plate, forming a crust. Brush crust with melted butter, making certain to brush top edges. Bake at 425° for 25 minutes. Remove from oven. Sprinkle cheeses and ham or bacon evenly over bottom of crust. Beat the half and half with eggs and seasoned salt. Pour over cheeses and meat. Bake uncovered at 350° for 30-40 minutes or until knife inserted in center comes out clean. Serves 6-8. Slice fairly thin for brunch since you have other dishes.

Strawberry Pancake

Ingredients:
2 tablespoons butter or margarine 4 eggs
1 cup milk
1 cup flour
2 tablespoons sugar
1/2 tsp. vanilla
1 pint strawberries, hulled and quartered
1 tablespoon confectioners sugar

Heat oven to 425 degrees. Melt 1 tablespoon butter in each of two 9 inch pie plates in oven. Beat eggs with milk, flour, sugar and vanilla.Remove pie plates and pour half of batter into each plate; scatter with berries. Bake 20 minutes or until golden. Sprinkle with confectioners sugar. Makes 4 servings. If you have 6-8 people you would want to make two of these.

Honey Lime Fruit Bowl

Ingredients:
3 cups honeydew melon balls
4 cups fresh strawberries, hulled and left whole
3/4 cup honey
3 tablespoons lime juice
1/2 cup flaked, toasted coconut

In a large bowl, combine melon balls and strawberries; refrigerate. In small bowl, combine honey and lime juice; blend. Just before serving, pour over fruit and toss gently to coat. Sprinkle with coconut. To toast coconut: Bake at 350 degrees for ten minutes or until golden brown. Spread on a cookie sheet. Easily Serves 8-10 with leftovers.
